Brute-forced key 2--easy to do that at least!
I'm not proud, but I brute-forced key 1 now as well. Not sure I can do the same for 3--language barrier!

Key 1 Hint
In Chinese,
一 is "1"
二 is "2"
十 is "10"
For key 3,
たいこ = drum
さけ = salmon
さばえ = mackerel
魚はいなくなる = The fish won't (?)
Brute forced Key 2 but still don't know why

I got (thanks to nciku and google translate)

3 ぼらみます Mullet Try/Mullet body
Tried removing all the fish (salmon, mackerel, and mullet and got:

みます
But can't get any sense out of this ...

and it gave me this translation:
"The answer is to try"
In other words: "The answer is み"
Key 2:
1144 = press button 1 twice, button 4 twice on a standard japanese phone, and we get ”いち” = 1
3000 = さん = 3
644 =はち = 8
Key 3:
Hint : Fish disappears (i.e remove all names of fish from the table).
Left with:
こたえはみ

Thank you @mhtyhr for the explanations of the puzzles -- so a HUGE language barrer. "If you don't know Japanese, this could be very difficult" as some of our games used to say!
